Polysaccharides are carbohydrates used in a number of industrial applications, such as thickeners, gellants, emulsifiers, and delivery systems of many commercial products. Research in the area is limited, however, and this book fills this gap, providing an up-to-date look at polysaccharide modifications, interactions with surfactants and micelles, stability, and characterization of polysaccharides.
