I always wondered how the chefs on Top Chef could have memorized all their recipes. It's all about the ratios, apparently! This book is a bit of an oddity since I hate math and I'm terrified of numbers and the idea behind this book is kind of based in math – yet, Ruhlman makes it easy to grasp as recipes are boiled down to fundamentals. And once you know the fundamentals you can make cakes, pie dough, custards, stock, sauces, etc. Knowledge and a good scale and you're good to go!
