I made the version in Yotam Ottolenghi and Sami Tamimi's Jerusalem, minus the nigella seeds. Its flavour recalled the delicious smell that lingers on the back of my hands after a hot afternoon at the beach: warm skin, wild yeast, the fading perfume of Factor 30, and the parched, musky grass of the dunes.
